If I attned Real Estate school for Century 21 within Canada, does that qualify me 1) for education and 2) haing a recognized job offer if the Real Estate office sends me for my Real Estate License to retain me after I complete and pass the course?

I doubt it. First of all real estate classes are not degree programs, and is what counts for education. Second most real estate offices in Canada operate on a commission basis so a "job offer" from them is meaningless to immigration as there is no security of income Third there is hardly a shortage of realtors in Canada, likely there is nothing that you could contribute that couldn’t be filled by a Canadian.
